Restaurateur Shepard Ross and Chef Adam Dorris, a 2015 finalist for Food & Wine’s The People’s Best New Chef, will host this special Inside Access from Chase private dinner at their signature restaurant, Pax Americana (Pax-Am).
Guests will begin their summer evening with refreshing seasonal cocktails and hors d’oeuvres followed by a summer inspired six-course dinner specially curated by Chef Adam Dorris with a combination of individually-plated and family-style dishes. The menu will combine the freshest local seasonal ingredients with Chef Dorris’ extensive culinary skills in butchering, pickling, smoking, brining and fermenting. Each course will be paired with wine, selected from Pax Americana’s all-American, small producer wine list. Throughout the evening, Chef Adam Dorris will visit and take photos with guests, and share his culinary journey.
Pax Americana, recently featured in The New York Times as a standout in Houston’s dining scene, is a collaboration between Executive Chef Adam Dorris, Restaurateur Shepard Ross of Glass Wall & Brooklyn Athletic Club, and Hoteliers Dan and Mark Zimmerman of La Colombe d’Or Hotel & Zimm’s Bar. The restaurant’s moniker, Pax Americana, is derived from the Latin for “American Peace,” a phrase commonly used to describe the era of peace between the great nations following World War II.
