This exclusive Inside Access from Chase evening will be hosted by Executive Chef Alex Seidel and Chef de Cuisine Matt Vawter. Adding to his award-winning success with Fruition Restaurant and Fruition Farms Dairy & Creamery, Chef Seidel opened Mercantile dining & provision, restaurant and European-style market, in 2014 in Denver’s Historic Union Station. Chef Seidel and his team continue to solidify the continuity and sustainable relationships between restaurant, farm and market.
This private evening will begin with a reception where guests will experience cocktails and hors d’oeuvres featuring fresh, seasonal ingredients direct from the farm. Guests will have an opportunity to hear from Fruition Farms Dairy & Creamery Cheesemaker Jimmy Warren and Fruition Farms grower, Isle Meyer during this special evening.
Chefs Seidel and Vawter will specially curate a five-course farm-to-table menu to demonstrate the quality, sustainability and passion behind Fruition Farms. Each course will be skillfully paired with wine selected by Wine Director, Patrick Houghton. Chefs Seidel and Vawter will visit with guests and talk about their culinary journey, philosophies of farm-to-table cooking, and vision of approachability and transparency in dining.
Chef Alex Seidel was named a Best New Chef by Food & Wine magazine, and has been a semi-finalist for the James Beard Foundation’s “Best Chef Southwest” honor numerous times.
In 2014, Chef Matt Vawter received the Zagat Award "30 under 30 Culinary Game Changers." Like all cooks at Fruition, Matt started at the bottom as garde-manger and quickly rose through the ranks to become Fruition's Chef de Cuisine and is now the Chef de Cuisine at Mercantile dining & provision.
